Holy Cow Guys! This soup is everything YUMMY!
This recipe is a hearty, warming, creamy soup that is packed with veggies and awesome flavor that everyone will love!
And who doesn't love a crock pot recipe! And one more tid bit about this amazing soup..it is a vegetarian whole30 meal! Psst don't tell the kids...
1 medium yellow onion finely chopped
2 cups peeled, chopped sweet potato
2 15 ounces pumpkin puree (not pie filling)
1 15 ounce can of tomato sauce
2 teaspoons of honey
1 quart vegetable stock
1 teaspoon granulated garlic powder
1/4 teaspoon cinnamon
1 1/2 kosher salt
3/4 cup coconut milk
Optional toppings: toasted pumpkin seeds, chopped fresh rosemary, greek yogurt or sour cream.
1. Add onion, sweet potatoes, pumpkin, tomato sauce, honey, vegetable stock, garlic powder, cinnamon,and salt to a 6 quart crock pot.
2. Secure lid and cook on high for 4-5 hours or on low 6-8 hours.
3. When done cooking add coconut milk. Then using a immersion blender, blend until well combined and smooth.
4. Taste and add additional salt if desired.
Makes 4-6 servings
Not sure about you guys but cranberry sauce is not one of my favorites on the table at thanksgiving...but this recipe has changed my mind!
Pre made fillo dough cups
Can of pre made cranberry sauce
Fill pre made cups with cranberry sauce and 1/4- 1/2 cube of mascarpone cheese
Bake at 350 for about 12 minutes.
Well peeps, I am the one in my group of loves that is ordered to bring the cocktails..this is going to be on the menu this year!!
I will be making martinis in a punch bowl!! I'm visualizing the stories after a few of these!! I cant wait!! We will serving them in mason jars! This is such a wonderful fall drink!
1 liter of good vodka (Purity is my favorite!)
1 cup of orange liquor
1/2 cup of Apple Cider
1 Liter of Ginger Ale
Pumpkin Spice (to taste)
Cinnamon (to taste)
Mix all liquids in a punch bowl
Lay sliced apples with cloves in them on the top of the liquid
Serve with ice and cinnamon sticks in a Mason Jar ...Cheers!
